Dilworth Coffee has introduced a rare harvest coffee—a limited edition honey processed coffee from the famous Honduras coffee farm—Finca Cual Bicicleta. We asked our Director of Coffee, Brad Kirby, to share his thoughts about this coffee and describe what makes this offering an ideal coffee to launch in conjunction with the POUR Coffee Festival in Charlotte, NC.

What are the general flavor characteristics of coffees from Honduras?

Brad Kirby: Like most Central America coffees, the coffees from Honduras are usually very balanced with a nice mixture of sweet milk chocolate flavors and a lively acidity. Although, more recently, we are finding a few coffees that could be described as more tart and fruity, especially for a honey processed coffee. These beans, imported through our friends at De La Finca Coffee Importers, are terrific. Roasted well, they will tend to have a medium body and a clean aftertaste at both a light and medium roast level.

What attracted you to Finca Cual Bicicleta?

Brad: Finca Cual Bicicleta in Honduras is a farm that I have a lot of respect for, and so I was very excited to find out that owner Oscar Omar Alonzo had a few bags of his highly acclaimed honey processed coffee available for purchase. Oscar Omar Alonzo is a legend of micro-lot farming for his innovative organic and sustainable methods. All coffee from his farm is very well regarded and in very high demand.

Although much of coffee from Finca Cual Bicicleta is either full natural processed or wash processed, these beans are honey processed. So, they are particularly exciting. Honey process refers to a drying method where the skin of the coffee cherry and various amounts of fruit pulp are removed before drying. This leaves some of the fruit around the bean intact as the bean dries, giving the final product a bit of extra fruitiness and sweetness.

Describe the cupping notes that we’d find in this coffee.

AROMA:  Nutty – Honey – Florals
BODY:  Medium – Silky
FLAVOR:  Lemon-Raspberry – Honey – Caramel
ACICITY: Balanced – Lively
AFTERTASTE:  Floral – Clean – Smooth

How did you approach roasting the Finca Cual Bicicleta to help define the characteristics you wanted to accentuate?

Brad: You often find coffees from Finca Cual Bicicleta roasted on the light side to accentuate the coffee’s fruitiness and acidity. But I wanted to draw out the roast to develop the body in this coffee. The roasting team spent some time tinkering with the roast levels to develop a cup with a medium and silky body. We believe the body we’ve achieved in this coffee balances out the flavors and acidity quite nicely. The result is a cup that provides a much more harmonious experience than you might expect from a honey processed coffee.

How would you recommend brewing Finca Cual Bicicleta?

Brad: I would recommend any method where you can tightly control all the variables of brewing exceptional coffee. So that could be a Hario V60 or an aero press, for example, with a good 17:1 water-to-coffee ratio. To experience the best this coffee has to offer, be sure to control the water temperature, turbulence and time while brewing. It is a coffee that should be savored, and that starts with spending the appropriate attention with the brew method.
