This coffee is a “full natural” or dried-in-the-fruit coffee. The farmers pick the coffee fruit and lay it out in the sun until the cherry turns from red to deep brown – a bit like drying grapes into raisins. Since the bean sat inside the fruit during the drying process, it takes on more of the natural sweetness of the cherry than it would have if the seed was extracted before drying. As a result, the Brazil Mogiana Natural produces a silky, smooth cup with a nice nutty sweetness balanced by flavors of sweetened cocoa.
